Demons souls

With the red eye knight all you need is thiefs ring to kill him. Just run up to him shoot him with a soul arrow then run away until he stops chasing. Then creep up behind him and shoot him in the back with the soul arrow again. Rinse and repeat till he dead. Also tower knight is pretty easy just run up behind him and take out his weak ass feet thats what I do.
 
4-1 is also a pretty good place for soul farming early on.
Each enemy there is worth about 300 or 400 souls and they're pretty easy.
Just kill the first 8-10, evac and repeat.
There's also red eyes enemies there that are worth a bunch of souls and aren't as hard as the red eye in 1-1.

The boss that gave me the biggest scare was the 3-3 boss.
I was in soul form for most of my first play through so this was my first encounter with a PCBP.
 
Mage starts off easy but gets harder. Warrior starts off hard but gets easier. What makes mages so hard in NG+ is the pure fact that One mistake will get you killed. As a warrior you can soak a lot more damage.
 
Tower Knight is not easy WTF. You mages and your cheap ass magic.

For me this sucka was unpredictable, once you finally work your way to his feet and start happily slashing away, he jumps back and crushes your ass. He seriously keeps you on your feet, and I found myself running away more times than actually doing damage.

The easiest boss is the witch.
 
The witch is harder as a mage. As a warrior, you can run up to her, and then smack the shit out of her. With a mage, you need to weed out her copies, and then you really only get 1 or 2 shots at her before she restarts her cycle. Another reason why the game gets so much easier towards the end with a Warrior is because NO SPELL, not Soul Ray, not Fire Storm, nor Gods Wrath will EVER do as much damage as a decked out warrior two-handing a MEAT CLEAVER.

As a mage in NG+, False King Allant was also very hard... as I said before, ONE mistake and you are dead; I had to team up with a warrior to beat him. The warrior just ran up to him and started laying it down, soaking all the damage, and occasionally running away to eat some herbs. Yes, I was in the back, blasting the king with my strongest spells, but it wasn't doing nearly as much damage as the warrior's Meat Cleaver.

For me, the scariest boss without a doubt is Old Hero. Not necessarily the boss itself, but because of the amount of work required to get to him. That second grim reaper, with the female specters that shoot lasers out of their eyes is a pain in the ass.
