Skyrim

How to be op in Skyrim: Pick anything besides magic(sword and board is best), only upgrade health when you level, have 100 smithing, have 100 enchanting, pick light armor over heavy, reach armor & magic resist caps.
No increases in stamina as you level? I think your logic is a bit flawed, Solo

You only need 1 stamina to do a power attack or bash. :P

Edit: What's the point in upgrading it if you only need 1 stamina to do everything that really requires stamina? Only reason to upgrade heath is so you don't get stuck in kill blow animations as much at low levels.

Good point :p You only need so much stamina to do a power attack... The only reason I said that was because I like to have a lot of inventory room but now that I think about it you can just do the Restoration loop and enchant a ring that will give you like 1074817598136985697867+ inventory space.

The default 300 carry weight is already quite a bit though. Lol

It's not enough. If you make a character that wears heavy armor then that's pretty much half you inventory right their :/ Weapons also take up a lot of space. And I like to have a variety of both apparel and weapons on me at all times so I do need a lot of space lol.
